Bitty Foods is a company on a mission to make insect based foods a mainstream part of the western diet.  Using Cricket flower as a base for delicious baked goods they are spreading the word about the benefits of incorporating insects as a protein source.
 
Once you get over any mental qualms you may have about eating insects you can easily see the global benefits of insect protein vs our mainstream varieties.  The basis for this view is confirmed by the UN which has reported that greenhouse gasses may be reduced by 18% and food costs reduced by 33% if insects are incorporated on a global level.

Ingredients:

Megan Miller, the founder, and her team have packed their baked goods with the finest ingredients avoiding the use of grains, soy, corn, legumes, dairy, and refined sugars. 
 
Currently they have 3 main products including: Chocolate cardamom cookies, chocolate chip cookies, and the proprietary blend of Bitty Baking flower.
 
The ingredients for the cookies consist of TCHO cocoa powder, cardamom, coconut oil, low glycemic-index coconut sugar, coconut oil, raw sugarcane and dark chocolate chips.  The flower is made up of Cassava flour, cricket flour, coconut flour, tapioca starch, and xanthan gum.
 
All products incorporate cricket flower as their protein source.

Is it safe?

Crickets are closely related to shrimp and may have some of the same allergenic properties.  If you have a shellfish allergy you should avoid cricket based products.

There are more and more companies beginning to either play around with or focus exclusively on making cricket flour based treats.  Some of the more popular ones include, Shark Tank contestants, Chapul and Exo bars.
